Rainbow Cupcakes

This baking batch is as much for the eyes as it is for the palate as these cupcakes are -literally- filled with color, of course I'm talking about Rainbow Cupcakes.

The process to make them is exactly the same as with the regular cupcakes, except it is a bit more elaborated, as you have to color 7 small amounts of the dough one by one and then mix it all together, but with a little patience and creativity, the results will be quite cool.

Whole Grain Cupcakes

...And, to continue on the making the best outta my -tiny- mistake with the flours, we bring to you: Whole grain cupcakes!! Oh yes, this is a -quite surprisingly- really good one, especially when freshly baked.

Plus, the purple cupcake liners give it a nice touch. You can make them simple (just whole grain) or you can add different little hints of flavor such as bacon, ham, pretty much anything you like really. And you can put a cream cheese icing/topping and, in this case, we added a bit of Chipotle sauce to make it all more interesting. If you try them, you're gonna love them!!

Whole Grain Pizza

As many of you know, the Chef at the house is my sister Gisela, well, a few days back I went to the supermarket and she asked me to bring some flour, she even gave me a specific brand! Which I brought...except I didn't realize I was actually buying WHEAT flour! lol She didn't realize it either up until she was about to bake hehe. However, she decided to make the best out of it and not to waste that wheat flour, what did she make of it? Whole Grain Pizza!!

We had several different ingredients at home so she made a variety pizza.

Shrimp. Egg. Shrimp (again). Ham.

We used avocado to top the Shrimp Pizza.

Celery Canoes filled with Tuna Salad

More and more people are doing their best trying to eat healthy these days, however, that's not always so simple or even worse, not so good and/tasty...or so many people think! Here's an idea of something that would make a good mid-day snack or an entree, or even a nice breakfast: Celery canoes filled with Tuna salad.

As always, you can use a bit of dressing to make it more interesting and tasty.
